Morning Favorite from the Garden

Not only is this a crowd favorite for the morning Sunday Brunch, but offers a savory choice for a side dish with roasted chicken. Enjoy!

Zucchini Onion Bake

Ingredients 3 eggs 1/2 cup grated Parmesan cheese 1/2 cup canola oil 1/2 cup grated sharp American cheese 1 minced garlic clove 1/4 tsp salt 1/2 tsp garlic pepper 3 cups sliced zucchini 1 cup biscuit baking mix 1 large onion chopped

Instructions Preheat oven to 350 degrees. In a large bowl, whisk the first seven ingredients. Stir in the zucchini, baking mix and onion. Pour into a greased 9-in-deep dish pie plate and bake 25-35 minutes or until lightly browned.

Cook Time: 25 to 35 minutes
